LAFFlines #5: Holiday Relish

My brother Fletcher said it best: “Recipes are for consultation.” Culinary historian Dr. Jessica B. Harris agrees. She encourages people to just start cooking, to not be held back or intimidated or anxious about recipes. Chef and cookbook author Yotam Ottolenghi (whose online “foodpedia” is an informative delight) recently said you can substitute any ingredient, as long as it’s not in the recipe title.
Fortunately, this week’s recipe—“Holiday Relish”—doesn’t have any ingredients in its title. And it doesn’t include LAFF at all. I want to offer you something delicious to make even if you don’t live in the New River Valley with access to LAFF. Holiday relish is my Thanksgiving postscript to you. It’s a postscript worth re-playing throughout the holiday season. Here goes:
It’s a fruit zest fest in the processor.
In a food processor, blend the following: 4 cups cranberries, 4 clementines (washed, quartered, stem nub removed), 1 sliced apple, 1 sliced pear, 3 tablespoons brown sugar, 2 teaspoons ground cinnamon, 1 teaspoon ground ginger, ½ teaspoon ground cloves, and a pinch of fine sea salt. Voila…holiday relish.
I relish it with a spoon directly from a cereal bowl. But it’s equally relish-able as a relish: on crackers, on LAFF, in sandwiches, in salads, etc. I’ve even baked it in a rustic galette and drizzled it with balsamic glaze; added pecans; swapped the brown sugar and ground ginger with crystallized ginger; used two different flavors apple instead of a pear…no pressure, no limits with this one. Go for it!
LAFF available at Eats Natural Foods
Delish relish.
The first LAFF delivery to Eats Natural Foods will be on Friday, December 6. Then, on Saturday, December 7, I’ll be at Eats with samples at 10 am. Look for the 8 ounce (3.5 serving) LAFF packages in the freezer section at Eats. Eats is located at 708 N. Main St. in downtown Blacksburg.
LAFF samples at In Balance Yoga on Friday
On Friday, December 6, students in the 9:15 am Hot Flow 2 Set class at In Balance Yoga will receive a sample of LAFF. In Balance Yoga (IBY) has a wide array of offerings and over 40 classes per week. IBY is located at 1512 N. Main Street.
