That’s an abridged version of the letter Ralph Waldo Emerson wrote to his daughter Ellen on April 8, 1854.

Odds & Ends Chili

Odds & Ends Chili: With a little LAFF and end-of-the-week leftovers, you can pull together a delicious dinner.

Are there odds and ends in your pantry and fridge by the end of the week? With some LAFF and a crockpot, you can cook up a great Friday night supper. Here’s the chili Steve and I had last night:

Combine in the crockpot: 1 can pinto beans, 1 can kidney beans, 1 can store bought enchilada sauce, 2.5 cups vegetable broth (leftover from Emerson’s enchilada sauce), 2 diced russet potatoes, about 1 cup roasted red peppers from a jar (leftover from Emerson’s enchilada sauce), cumin, oregano, chili powder, drizzle of Agave. Cook on low for 8 hours. Scavenge for toppings. We had avocado and tortilla chips.

No stress, no mess, maximum deliciousness.
