The main ingredient in our protein crumbles is wheat gluten. Gluten is the naturally-occurring protein in wheat. It’s been used for thousands of years to make a protein-rich food called seitan.

We elevated traditional seitan by adding garbanzo beans and fortified nutritional yeast. Besides delicious taste and texture, the garbanzo beans provide additional amino acids (molecules that combine to form proteins), while the nutritional yeast provides B vitamins.

Virginia Tech’s Food Producer Technical Assistance Network analyzed samples of our protein crumbles and generated the nutrition facts panel.

Virginia Tech alum Abby Steketee makes our protein crumbles at Millstone Kitchen. Millstone Kitchen is a shared use commercial facility run by Live Work Eat Grow, a non-profit in the New River Valley of Virginia.

What’s in our protein crumbles?

Ingredients: Water, Wheat Gluten, Garbanzo Beans, Dried Yeast, Tomato Pulp, Distilled Vinegar, Salt, Citric Acid, Niacin (Vitamin B3), Pyridoxine Hydrochloride (Vitamin B6), Riboflavin (Vitamin B2), Thiamin Hydrochloride (Vitamin B1), Folic Acid, Vitamin B12. CONTAINS WHEAT.

Every batch is hand-made in Blacksburg.
